Raw buckwheat honey from Northwoods Apiaries, a family-owned beekeeping business in Vermont's Northeast Kingdom with more than 20 years in honey, sold through Murray's Cheese. It is not pasteurized or filtered, so small bits of pollen remain and it can crystallize quickly. Murray's describes a thick, dark, complex honey whose sweetness runs toward molasses or brown sugar, with toasty, malty notes and a hint of bitterness like well-cooked caramel. It is too thick to drizzle. Sold in an 8 oz jar. Murray's serves it in a small bowl on a cheese board with tangy goat's milk cheeses.
