Buckwheat honey is made from the nectar of the small white flowers of buckwheat, a fast-growing crop related to rhubarb and sorrel rather than to wheat. It is one of the darkest honeys, usually dark amber to nearly black, with a strong malty, molasses-like flavor that is less sweet than light honeys and a coarse crystallization. Much of it comes from the northern United States, Canada and Eastern Europe. It stands up to baking, barbecue sauces, marinades, porridge and strong cheeses.
