Mitchem Bee Company's beekeepers produce this single-origin raw, unfiltered tupelo honey in the river swamps of the Florida Panhandle, where the white Ogeechee tupelo (Nyssa ogeche) blooms for two to three weeks each spring. Mitchem describes it as buttery, floral and smooth, with notes of cinnamon and vanilla and a pale amber colour with a greenish hue. Its high fructose-to-glucose ratio means it resists crystallization and stays pourable. It is sold in 8 oz, 1 lb and 2 lb squeeze bottles, a 1 lb glass bottle and a 5 lb bulk bottle. Mitchem suggests it over cheese boards, biscuits or vanilla ice cream.
