Hédène is a French honey house, selling since 2013, that offers single-origin honeys harvested by French beekeepers. This acacia honey comes from hives in the acacia (robinia) forests of Burgundy, where the trees flower from late April to late June and the harvest runs from mid-May to the end of July. Hédène lists it as raw, cold-extracted and unpasteurized, and describes it as pale yellow and liquid, with a soft, delicate taste, sweet floral notes and no acidity or bitterness. It is sold in a 250 g jar. The seller suggests it on toast, in yogurt or fresh cheese, or in dressings.
