Forest honey (Waldhonig) from Honigschmid, Frank Schmid's family apiary in Fischerbach in the Black Forest. Like other forest honeys it comes mainly from honeydew the bees collect in the woods rather than from flower nectar, which makes it darker than blossom honey. The beekeeper describes it as strong, spicy and malty and mostly liquid. It is only sieved, not fine-filtered, and kept below 40°C during processing. Sold in 500 g jars, in either the Honigschmid jar or the classic German Beekeepers' Association jar; a 2.5 kg pail is also offered. Suggested with bread, tea, cheese or in marinades.
