Hédène, a French honey house that sells single-origin honeys from French beekeepers, offers this linden (lime blossom) honey harvested in the Jura. The bees work large-leaf lime blossom from mid-May to July, and the harvest begins in early July. Hédène lists it as raw, cold-extracted and unpasteurized, white in colour and creamy in texture, with a fresh, slightly minty taste, menthol notes and no acidity. It comes in a 250 g jar. The seller suggests it for sweetening herbal teas and infusions, in cakes, muffins and cookies, or with soft cheeses such as Brie and Camembert.
