OpenHive Honey Wicklow Mountains Heather Honey

OpenHive Honey is an Irish beekeeping company working with the native Irish honey bee. Each August it moves hives up to the heather in the Wicklow Mountains, where the heather flowers for only two to three weeks. Heather honey sets like a gel and cannot be spun out, so OpenHive crushes it from the comb, filters it lightly and jars it raw in 227g glass jars. The tasting notes it publishes describe an orange-gold, jam-like honey with floral, citrus and treacle notes, a dark-caramel start and a bitter, lightly smoky finish.
