Heather Hills Farm is a family beekeeping farm at Bridge of Cally in Perthshire, working about 1,300 hives across Perthshire and Deeside since 1945. This honey comes from ling heather (Calluna vulgaris) that flowers on the Scottish Highland moors between July and September. The farm sells it as raw and unpasteurised and says it is never heated above hive temperature. It describes a warm, floral aroma, an assertive palate and a full-bodied malty finish. It is sold in a 340g jar. The farm suggests it as a glaze for pork, ham, game or salmon, or with Stilton and other cheeses.
