Lavender honey is made by bees from the nectar of lavender and lavandin flowers. In France most of it comes from Provence, where lavender honey can carry the Miel de Provence protected geographical indication. It is pale gold when liquid and turns creamy white as it crystallizes, which it does fairly quickly. The flavor is floral and delicately fruity with medium sweetness and a light herbal edge; it suits tea, yogurt, fresh cheese and pastry. Many products sold as lavender honey are ordinary honey infused with lavender; a varietal lavender honey has nothing added.
