Sourwood honey comes from the nectar of the sourwood tree (Oxydendrum arboreum), which grows in the Southern Appalachian mountains of north Georgia, western North Carolina, eastern Tennessee and parts of Virginia, West Virginia and Kentucky. The trees bloom for a few weeks in late June and July, and a good crop does not come every year. Producers describe it as light amber and buttery, with caramel, anise or spice notes, and it is slow to crystallize.
