Aialma Mel Monofloral de Castiñeiro (Chestnut Honey)

Aialma is a small beekeeping project in the village of Souteliño, in Laza (Ourense), Galicia, that sells its honey through its own online shop and describes its honey as raw, cold-extracted and unfiltered. This monofloral chestnut honey (mel de castiñeiro) is dark amber; the producer says it recalls wood and chestnut blossom, can taste bitter and even salty, and has a strong, penetrating aroma. The jar on sale is from the 2023 harvest and holds 500 g. Aialma reports third place for Galician chestnut honey at the Asociación Galega de Apicultura contest (2021) and a silver at the London Honey Awards (2022).
