Tupelo honey comes from the white Ogeechee tupelo tree (Nyssa ogeche), which grows in the river swamps of northwest Florida and south Georgia and blooms for only a few weeks in April and May. Producers describe it as light gold with a greenish cast, buttery and floral. Its high fructose content makes it slow to crystallize. Because bees also visit other flowers during the bloom, sellers note that no tupelo honey is 100 percent tupelo.
