Heather honey comes mainly from ling heather (Calluna vulgaris), which flowers on upland moors in Scotland and northern England from late July into September, when beekeepers move hives onto the moors. Ling heather honey is thixotropic: it sets to a gel in the jar and turns liquid when stirred, so it is often pressed from the comb rather than spun out. It is amber to reddish-brown, with a strong, aromatic flavour that can finish slightly bitter.
