Linden honey, also sold as lime or basswood honey, comes from the nectar of Tilia trees, which bloom for a few weeks in June and July. It ranges from almost clear to pale yellow or light amber, and its flavor is fresh and herbal, with a cooling, menthol-like note and a slight bite at the finish. It crystallizes at a moderate pace. Poland, Czechia, Hungary, Serbia, Romania and Ukraine all produce it as a single-varietal honey. The buy link goes to SeeBees' Natural Raw Honey Linden, a 400 g jar from Serbia.
