The Tasmanian Honey Company, based in Perth in northern Tasmania, makes this honey from the Tasmanian blue gum, the state's floral emblem. The company says the trees flower infrequently, often years apart, and that their original range in south-east Tasmania has been much reduced by land clearing. The honey is sold candied, meaning naturally crystallised, and is light and creamy in texture with a rich flavour. The company states that its honey is raw, with nothing added. It comes in 500 g and 1 kg jars priced in Australian dollars, and the company suggests it on bread, crumpets and baked goods.
