Eucalyptus honey comes from the nectar of eucalypts, the gum trees native to Australia. Australian beekeepers sell it as single-species honeys such as ironbark, yellow box, red gum and blue gum, and as general eucalyptus honey whose taste shifts with the trees in flower and the season. Lighter types such as yellow box are mild and buttery; darker ones are stronger and earthier. Raw eucalyptus honey often crystallises, and standing the jar in warm water makes it runny again.
