Melita Honey Farm, a honey shop and producer in Chudleigh, northern Tasmania, sells this single-varietal honey from the tall, slender ironbark eucalypts of the low-rainfall country of eastern Australia. Melita describes it as amber with orange flashes, with a perfume reminiscent of almonds and coconut and a buttery, sweet and very mild taste. The farm says its honey is raw: spun from the comb, passed through a sieve to remove wax, settled, and never pasteurised or heated to high temperatures. It comes in 250 g and 500 g jars; Melita suggests drizzling it over crepes filled with cream cheese and raisins.
